well bars are something of personal preference some people like super high rise others don't. I'm also 6'3" and I generally like bars with at least 8.25" of rise, however I have a top load stem and a few spacers under it so my bars are taller on my bike than my friend's who runs a front load stem with 8.5" rise bars. As far as width goes its also personal preference, I like my bars just a little wider than my shoulder width so between 26-27" wide. I'd say if you have no idea what you like and have a front load stem get some bars with at least 8.5" of rise and remember, when it comes to cutting bars, measure twice I've seen kids cut more off one side than the other before and I lol'd hard...
just to give you an insight, different size bars will affect different things. Im 6.1 and used to ride 8.6 bars,which made it quite a bit harder to bunnyhop as high as i could before when i rode 8 rise bars. But it made it quite a bit easier to manual and gave me a lot more control while riding. Later i switch ti 8.25 rise bars and found it to be perfect. Good balance between manuals and bunnyhops felt a hell of a lot easier. So try different bars and experiment.
Depends what frame degree you have and how you like to ride if you have a low frame go with higher than 8, if it is high frame keep with 8 (i have p 10s) every 1 says there shit but they are nice to ride with if u have a low frame and your tall.

10s are soo nice to ride with. i had mine with a elementary slammed.legit yo. now got a flipped cult salvation and they are lower but even better now.
