I have access to land for building dirt jumps but is seems like everywhere I dig, it's overrun with roots. Should I dig through it or find a new spot?

Are you next to huge trees ? Or are you talking about just small plant roots?
If this dirt is otherwise good, just deal with it ! ; )

Digging from the riding line, rather than a hole off to the side can help make faster progress and an integrated look:
