You shouldn't really change the shock dimensions.
So stick with the same size rear suspension.
You can change shocks (and if you have the marzocchi Rocco

You can put any standard dual crown on the front,

I am big into the speed in Technical areas and sometimes do large gap jumps and table tops. So I want something that absorbs small bumps the best so I can feel the least amount of bumps and keep the most control of my bike. Any Suggestions?

If the standard shock length is 9.5" (and I think it is, though measure before you do anything)
then you can fit any normal 9.5" shock, With The Right Mounts!
Shock mounts have a few measurements;
-how wide they are (sideways)
-how big a diameter bolt they have (which will either be a M8 or M6 bolt, which are respectivley 8mm or 6mm diameter)

The frame must match your shock mounts!

I have had a look but can't find a trust worthy source for the mounting hardware on a 09 commencal supreme.
so you will need to measure the shocks mounting hardware
-measure both ends for the width of each mount
-and measure both shock bolts for diameter (6mm or 8mm)

as long as you don't want to put manitou or anything else with strange mounting sizes on, if you get the right shock mounts you can put any 9.5" shock on you bike.

Luckily shock hardware is relatively cheap, and once you have the measuremtns, easy to get,
so if you can buy your next shock with matching hardware all well and good

but better to buy a better shock and spend 20 pounds getting new hardware (which needs to be replaced anyway TBH).

Yea I am not going to do It but I am going to get a better back suspension for it probably the first thing that I don will be that.

How much travel could the bike have if I put new Forks in?

well the frame will still have 160mm rear travel.
and boxxers, 888 or 40 (or any normal triple crowns) have 203mm travel.

Though the bike is still a Mini Dh bike, all of its reviews say that it should not be under estimated and still makes a great race bike.

If you're thinking of changing front fork and damper why not get a Sunday ? You'll get 8.5inches (215mm) rear travel and with a angle set you'd get much nicer geo.
