What's with filling tubeless with latex?

I see the benefit of not having a puncture, but also don't fancy ripping my tyre and getting covered in latex! And what's wrong with just going tubeless?

Tbh it came as a bit of a disappointment that my schalbe tubeless was not in fact going to be tubeless in the same sense that run flats on cars are (which would probably defeat having FSR) and so I filled it with latex on the advice of a colleague. Then I was like well now that's heavy! So I'm like shall I just take the latex out and leave it tubeless? Pros/ cons?

And by the way I never really leave the pavements anymore now I've lost all confidence having come off a couple of times recently...(in carparks...*blushing at my uselessness*) but guess If I ever get my confidence back, I don't want to be left in the middle of a forest in the dark having got a puncture and having taken the latex out...
