I have a couple weeks off from school, and don't have the money for a fatback, so I'm wondering if it's worth it to build a pump track out of snow?

I have a lot of excess snow and time, so those don't matter to me.

yes, but it will take time. you have to make a big pile, pack it, spray it with water/get it more slushy. after you get it wet shape it and let it sit out in the cold for a while until it freezes to pretty much ice. repeat this process until the correct shape is made. this will take time so do not try to rush it or else it will not work at all. make sure you pack it to the maximum.

Watch your weather forecast. Freezing nights at least and what daylenrides says. Also you can fairly cheaply make small amounts of snow.
