Obviously gluten is not something to have ,but but you can't eat celery then ride everyday because you need carbs ,i just started racing recently ,and taco bell before a race is not too helpful ,so what food guidelines do you follow to be a better overall competitor?

Do you have celiac disease? If not, then gluten is fine. The "gluten is evil" or Southpark's " gluten makes your dick fly off" are false.

Eat lots of everything. Fitness and sleep are a really big part of racing as well. Kale is good.
