How many gears?

I just got a 2011 Knolly Delirium frame that I am building up.
I'm new at working on mountain bikes, how do I know what group set to buy and how many gears (9, 10, or 11) will fit the bike?

9, 10 or 11 will most likely fit on your bike. I think the most important thing to consider is the ratio of the gears that you're going to buy (i.e., 11-42, 11-36, 11-34, etc.) you can basically determine that on the kinds of trails you usually ride on or on what kind of rider you are.

I'll be doing more free riding and downhill with the occasional uphill.
I was planning on buying a group set so everything matches up.
What would you recommend? or can you further explain "11-42, 11-36, 11-34, etc."?

Since you mentioned the occasional uphill, i think it'll be best if you go with 11-36 or 11-42 (Shimano XTR, XX1 or an XT 11-36 cassette + oneup 40 or 42t).

11-42, 11-36, 11-34 basically are the smallest and largest tooth profiles of your cassette.
