A quick question.. I'm currently running a 36t narrow/wide front ring to an -11-34 XT rear cassette. I'm looking to get a 40t rear extender sprocket. Will the six tooth jump from the 34t to the 40t be too big a jump?

Six teeth is the max recommended jump. I know from experience that 36-42, if tuned correctly and used with the correct derailleur (or something like OneUp's RAD cage), can shift as perfectly as stock Shimano gear is famous for. That said, I imagine 34-40 would be no different.
