Such as? If your taking about motorbikes that is massively different. There brake setups are a lot more efficient at cooling and have a far greater fluid quantity so are not as prone to boiling fluid.
Such as you have zero information about what variables led them to choose cable over hydro... modern dh brakes would be capable of stopping that bike from that speed without problems. You're making a wild assumption off of no information. This bikes not doing multiple stops so heat isn't actually a huge issue.

When Guy Martin set the speed record he used Hope brakes. Hydro is fine. It's not like she was planning on dragging the brakes for the whole run just for shits and giggles.

Having a brake at all, is just for getting from like 30-40km/h to halt.
The wind resistance will sort out the 200km/h to 40km/h fairly quickly, as soon as the pace vehicle is gone.

I bet it's mostly to keep the bike low to the ground, making it more aerodynamic and stable.

Also would save some weight over bigger wheels.
