You should shoot stars when there is no Moon in the sky , obtain an apature of f2.8 and use maxximum 25 to 30 seconds . Iso should 800 or higher dipends on what camere you use .

So considering I did pretty much everything not as you said; they turned out ok!

why such a high aperture, i never understood this?

If you shoot at f4 or higher you will have to have a shutter speed longer than 25 to 30 seconds , usually after 30 second's you will start to see star trails, in some cases is done purposly to see the star trails, but I think this is not your case.
Also if you use small aperture you will than need to put you Iso higher and get more grainy images.

The problem i was having, was that the entire sky was coming out too bright, opposed to just the stars? Is this because of light pollution/moonlight just from that night, or is it from personal error with my settings?

I don't know your setting's but having light pollution and moon are never good for star photography.
