If you liked those, I just did a batch of pickled green ( pre ripe) indigo rose tomatoes. They came out really cool. It seems that the extreme dark blue/ purple pigment in the skin dyed the brine a light red wine color after a few days, looks awesome with green and blue halved cherry sized tomatoes floating in it. Will be fully done in approx. 2 more weeks.
