This is something I posted on Farkin a while back and gives a basic overview of why two DHF's are sometimes used:

The F Minion is designed to provide steering and lateral grip whilst the R Minion is also having to encompass braking duties (hence the vastly different shape and orientation of the bars). On courses where you aren't really needing to brake heavily and prefer to keep cornering speed then the DHF can be considered the better tyre as it provides more grip and more predictable drifts as you have the bars digging into the trail rather than sliding across it. If you still need braking but want to increase cornering grip in loose stuff then the intermediate edge knobs on the DHR can be trimmed or removed completely to provide this. The technique on the real steep stuff when using the DHF is to cock the bike sideways into the braking zone for the corner and effectively put the tyres bars against the trail and so hook into the ground better.
