It's about what you are comfortable wearing/comfort of equipment/skill level/trails you are riding/etc. Why stop at knee protection and not also throw on arm/elbow/shin/wrist/neck/chest and back protection? If I'm riding gnarly rocky stuff I'll wear knee protection. If I'm practicing tricks and worried about shinning myself with a pedal, I'll use shin protection. If it's only dirt and my biggest concern is clipping a tree, I'll stick to the full face.
