ok well i guess its me then i live next to a mountain and the single track on the mountain is smooth and flows but is has some rock here and there that make you stumble

its a skinny trial but single track is smooth and every turn has a small berm but it doesnt really matter

It's still singletrack. I like to build more technical trails , but also like riding smooth singletrack, so I see where your coming from. My problem with building smooth singletrack is the land I build on is on a hill.
