Sweet music choice. You are getting good shadow detail with the T3. Your choice of pans and vid placement is getting that pro look. I think I caught the autofocus "hunting" for focus in a few frames. The beauty of shooting vid with SLR is the abuility to use manual focus. Selective focus is a very powerful tool in your arsenal.
Can you choose what iso you shoot at in video?

Thanks! this video was actually shot on a T3i, on the T3 you can't choose iso but the T3i does allow you to, most of this was shot in manual focus I'm just not that great at following a rider with it, i guess thats why it looked a little autofocussy

So the T3i is a very wise choice. Honestly your vids are wiked to watch. Doesn't hurt that I have ridden the same trails. It is cool to watch the progression of us homegrown video artist.
