Reach and Stach Height....Again

I need to replace my old road bike and my long distance touring bile. Okay now, I have read all about reach and stack height and now I can measure just about any bike and come up with those measurements. That's a help, but it still does not tell me how I should measure my body to come up with the corect reach and stack height I need for the correct frame size when replacing the above mentioned bicycles. Any help????
