Mainly because I found a complete rear from decathlon for 25€ that uses the same size tire and already has the single speed mounted

Will I run into any trouble?
Your fork needs to be able to fit that first and foremost
You get a strange tire profile, as the rim is 13mm internal as I recall. The tire will stay on the rim, but it will flop around when cornering at speed.
What size do you recommend? I am looking for something somewhat beefy
Find yourself a set of wheels with tubular rims. Thart'll allow you to run cyclocross tires, and have no concern about the rim. As I recall, my cross bike is on 42mm tubulars, on Mavic Open Pro T rims. Here in Europe such wheels sets are dirt cheap second hand.
