Anyone who has done crit racing what the average speeds are within the categories? Looking at getting into some racing and was curious. Thanks in advance.

Don't worry about average speed. If you start racing you'll automatically be CAT 5, which will put you in with all the other beginner racers. There are some guys who will blow everyone out and should really be CAT 2's, who are really fit but just new to racing, but there are a lot of guys who will be around the same pace as you.

Crits are more about positioning and being able to accelerate than overall speed. Try a good fast group ride first to get used to riding around other people. But try racing, and see if you like it. No matter how much you think you can "train" for a race, its always way different and way harder than you expect.
