Hi I was wondering whether it would be a good idea to convert my hardtail to a dirt tourer by just putting on drop bars (with road shifters) and a rigid fork?

Sounds good to me

road levers are usually short pull, and MTB brakes (v brakes or mech disk) are usually long pull...

and

matching up Road shifters with MTB mechs doesn't always work .. it really depends on the combination that you are thinking about ...

I have converted my Electra Moto 3i to what I would call a commuter. Everything worked out okay, including brakes. The only issue I have is the shifter. Have a twist shifter which does not fit drop bars so i had to rig something up. I want to get a barend shifter.

My Electra Moto 3 with drop bars. As long as the brake levers are linear they should work for mechanical disk brakes not sure about hydraulic disk brakes with drop bars. The only real issue is the shifter. I have a temporary fix that is functional but not really aesthetically pleasing.
