I own Giant XTC (?) MTB. I had it in for a tune up I was advised to replace the rear cassette the chain and 2 of 3 chainrings. It has Deore shifters. Could I convert it to a 2x10 instead of going back to original setup? I want to retain the shifters and deraileurs . Any recommendation for what to replace it with? It is just for trail/singletrack I have a different bike for road riding.

Switching from 3x10 to 2x10 is as simple as putting a bash ring or some spacers where the biggest chain ring goes, then adjust the upper limit on your front derailleur.

Currently I have a 9 ring cassette. Is there any issue for the rear derailleur changing to 10 ring?

Yeah you'd need a 10 speed shifter and derailleur. You could go 2x9 instead. I rode 2x8 for a long time never felt like I needed more gears.

That would be an option. I will only use bike off trails and on single track.
