How small an area can you build a little pump track in and it still be fun?

I just filled in an old pool in our backyard and I am thinking it would be fun to build a little pump track around the perimeter of where the pool used to be.

That would be fine, it's all about personal preference. I've seen a couple people build pump tracks in their yard, you just may get bored with it, just depends on your setup but worth trying it IMO.

It depends on what you ride. If you ride a 20", a smaller track will be rideable as they accelerate better and turn quicker.

There is a "junior track" at a local park built in an area approximately 40' x 60'. It keeps me entertained .

That space looks plenty big. Just go for it you can always just take it down. A few rollers some nice germs and maybe even a small jump.
