I'm wondering how each of these compare when it comes to suspension characteristics. Are there any good resources out there that describe the effects of reducing fork travel as opposed to adding volume spacers?

Volume spacers ramp up the air pressure quicker when the fork compresses, resisting bottoming out. Completely different than reducing travel.

Reduce fork travel - less weight, lower frontend
Spacers - ramping up compression
