Hi was just wondering what people think of the Shimano xt new 30mm wheels or XT hubs as I can’t find any real world reviews. Would this rear wheel be suitable for enduro riding?

They are quite new thats why no reviews yet. They are intended for trail/enduro, so if you like their new near silent hub go for it. Otherwise for that money (or a little more) you can buy some more well known/tested wheels (like DT, WTB, Spank etc.)

what DT wheels would you choose instead? It’s annoying how they come with 18T as standard on the ones with 350 hubs. I need microspline so the upgrade ratchet will cost extra on top for more engagement

Maybe go for custom build, Hope hubs + DT rim, Hope has microspline now.
Otherwise DT E1900/1700, depending on your budget. Upgrade ratchet is a bum, but you can have those hubs almost forever later, with new standards you change endcaps usually and you can move them to newer frames if you want.
