DSLR - how far have they come?

Hi all - first time using this sub forum, thank you in advance for sharing your knowledge!

I used to be fairly into landscape and macro photography, about a decade ago. The things I learnt at the time were broadly - in order of importance - framing, use of light, lens quality, RAW processing, camera quality. Having said that, the difference in quality between a smaller and full frame sensor was noticable.

I now find myself needing to take photos of mtb products in woodland as well as faster action shots. Reading up on camera tech again the perceived benefits of full frame sensors seem much less than they were due to improved sensor technology.

The question: within a budget are the reviews right, has DSLR technology really progressed so rapidly that I can happily order a mid range aps-c, or are you still better of buying an entry level full frame. (Both second hand)


Caveats
- within the same budget budget (of course a high end aps-c can match and entry level full frame)
- the focus is on fast prime lenses (1.4, 50mm)
- high contrast forest shots are the main target, action shots are a nice extra
