I'm unsure of when to use the purple, vs white, vs green trail classification. Is there some official guidance on this? Generally, I've been setting fireroads to purple. Should bike paths (often paved) be white? The IMBA documentation says white is "hardened or surfaced", while green is "firm and stable". What would a 72" wide gravel or hardpack qualify as, white or green?

Sounds like you got it correct. Purple is usually used for things that are not singletrack, like dirt roads used to access trails. Paved bike paths used by mtn bikers should fall under the white category.
