Been looking at the 2020 cube stereo 120 pro 29"
Is this a good mtb for my first one? Looking at getting into mtb life just not sure what to get. Thanks in advance

Best advice is always try before you buy (if you can). Bikes are so idiosyncractic. For me, I only ever feel a bike is "right" after I've ridden it for a few months. Buying one is a bit of a gamble but you can always sell it if you really hate it.

Calibre Bossnut is what you should be getting as an entry bike, less than $1000 and more than good enough to grow with your skills https://www.gooutdoors.co.uk/15985702/15985702-calibre-bossnut-mountain-bike-black and a decent platform to upgrade, the black version linked is sexy as f*ck as well

There was a field trip review of it a couple of weeks ago https://www.pinkbike.com/news/field-trip-calibre-bossnut-the-boss-of-low-cost.html

I agree with the Bossnut, I have one myself. Great value, but its only 27.5" as far as I know. Its worth the look though, if you don't think its enough to grow into, they offer some higher levels (Triple B and Sentry) all sub 2000 GBP.
