Factory is Kashima. Performance Elite is black.

So If I swapped for Kashima, my Performance Elite would become a Factory Float?

I don't believe that it is as simple as that. The Kashima and Performance models can have different dampers as well. Hopefully this will help you.

It was helpful 'cause when I went to ridefox.com I was able to look up servicing and set up for both. I think Factory was an air-shock while Performance Elite utilized springs.

No. They are both air spring.
