Im building a single speed and wondered what gearing everyone is using ? trying to figure a good starting point.

As noted above it really depends on how strong you are and what you'll be riding. If you are moderately fit and will stay on flat sidewalks it's completely different than being out of shape and riding up mountains.
Here's a site that you can explore to help make a decision. You can mess with the different factors and see how fast you'd go on a flat surface. Lots of other feature on this site as well so you can see ratio instead of speed, different wheel sizes, etc. No matter what you pick there will be times when you'll be spinning out and pedaling with almost zero effort and other times when you'll be standing and grinding the pedals to move at all. You have to figure out how much of one or the other you will experience and select gears that will make the job feel right for you.

Maybe I'd start at 30T chainring with a 14t cog and see how it feels? And then adjust one, the other or both to suit my cadence and fitness.
