Hello, I am fairly new to trailforks, but I created some trails in my region. I used the EURO/UK difficulty rating since this is the region I live in. When clicking on the trail and then proceeding rating it, it only gives the IMBA difficulties and not the EURO ones. So nobody could rate the trail as red if I chose to give it a black rating.

Is this issue known or is it something on my end that I am missing?

When you edit the trail, do you see a button below the ratings list with the text "switch system"? If so, this allows you to change the ratings system the trail is using.
