My challenge is, I am looking for a clip-in system that shifts my weight as close to the arch of my foot as possible. Born without toes makes it a challenge to use pedals with the weight is forced directly over the front of the foot - this is too painful. If I can find a system that clips close over or closer to the arch of the foot, I would love to give it a try!!

The pedals are not what you need to change - it's the shoes that clip to the pedals. The pedal clip is in practically the same place on all brands; however, you may choose shoes with the cleat (the part that gets clipped into the pedal) further from the toes. Most shoe cleats, if not all, are adjustable and allow the rider to slide the cleat back and forth within a limited range. I believe you are looking for a shoe wherein the cleat can be moved further from the toe as possible. Most cleats are adjustable within a certain distance of the ball of the foot.

So my recommendation is to begin researching shoes and find those with cleat adjustment that allows for the most comfort.

So further to that, if anyone has experience with a shoe that has good adjustability in the clip-in, so it can drop back toward the arch significantly, I would be very interested in learning or even seeing a picture!!! Those Shimano ME7 shoes shown above have quite long slots. Looks like there would be room to file the slots out a bit more also. I have a pair of those & run the cleats about midway in the slots, which is more rearward than I used to have them back in the day.

Glad to help - you may end up getting creative as suggested above by grinding or filing out the material to suit your adjustment requirement. This can be tricky as some soles are very different and may have large or small reinforced areas for the cleat contact area. Also these reinforcements may be plastic or carbon fiber among other things. A specialist or somebody very experienced in this department should be assisting you.

Makes sense. I agree it could take a bit of experimenting to move the clear contacts. I’ve got some connections, I’ll seek out some further expertise to guide the process! Ideally, I would hope to find a shoe with great adjustability but that may be too much to ask. The search is on!! Thanks
