You know how bike reviewers state this bike is or isn’t a “plow” bike?

Which bikes in particular would you consider plow bikes?

And are there any such bikes with give or take 150mm rear travel?

What are y’alls thoughts? Do coil shocks need to be present? Or is it a leverage rate thing?

150mm is not generally considered "plow bike" spec, but you can get a bike that plows reasonably well at that travel.

I have a 150mm V3 SC Bronson and I would say it plows. It has an air shock, so I would say plowing is very dependent upon the geometry, although coil is generally more planted and plow friendly. It will get overwhelmed at a certain point, so it is not as plowy as say a 29er with more travel on a coil, but it is quite planted up until you hit double black tech trails at speed.

Most bikes that can be pushed ambitiously these days plow well to a certain degree. You can always set up your bike to plow by changing the suspension settings, ride/cockpit position, add heavier/damper tires and/or a coil, etc.

I would recommend an ebike as it will be much easier to pull the plow.
