so everytime (well most times) i see a picture of a DH race bike or just a very nicely spec'd bike the pedals are off, is there any reason for this?

It's because everyone likes to run different pedals. Some people like to clip in, some like flats. Usually there are no pedals to leave the options open.

Edit: For new bikes.

Pedals are like shoes, peple like to find and buy the right ones for them. Alot of high end bikes dont come with pedals because of that reason.

That's what I always thought. It's not like everyones gonna be carrying around theyre own pedals to a bike demo.
