Well then I’d go for Rock Oven (it’s close to where you are staying) and then if you can get a second ride in, a lap in Three Blind Mice. A pedal up to Rusty Muffler and then pick your own adventure down. Eagle, Mule Deer, High Roller, Drops a Lot, Wedding Crashers is a favourite.

To clarify, penticton tech is rock.
Sharp. Loose. Angled. Janky turns.
Fun, but very different than other versions of tech.

Run a few extra psi in proper cased tires or you’ll be flatting, burning into valuable ride time.

To mellow it down a bit more but stay to Bluffs area, climb the road and do a Ward1 lap and back up to descend Kraut.
