What kind of video? $500 won't get you much in that realm but if it's POV, GoPro2 would be what I'd get.

A camera for filming edits and the like
Where is the price point that I can start seeing good quality video?

You can make some great video with the GoPro but you need software to go with to make your edits.

You could shoot with a video capable dSLR for more control (Canon/Nikon) or you might go with a video camera. Entry level prices might start around USD$1000 for the dSLR or video camera. Buying used will save you some money.

Software ranges in price from "comes with your operating system" (think iMovie or Windows Movie Maker) to expensive (think Final Cut).

From your answers, it sounds like a GoPro (or something like it) and some OS editing app would be enough to get you going.

Added as a contact ^^^. I don't get a whole lot of pictures of biking now a days. Most of my friends have stopped biking and moved onto other things. But here is my Flickr photo stream as well. http://www.flickr.com/photos/66750524@N07/

Mega. Lots of shooting photos and vids. Not to mention having to write articles now as well.

Gonna pick up the D4 today.
