I have been seeing a lot of both recently, people calling their fork(s) fork or forks. When referring to the part of your bike that is used as suspension on the front of your bike, do you say " my fork is.." or "my forks are..."
Is it all opinion or is there a right and wrong here?

I personally believe it is "fork," but people from different places might say different things.

I'll say whichever one bothers you the most.
