High carb foods work well before any form of exercise (breads, pastas, beans, potatoes, bran, rice, and cereals) because they provide energy, but your diet should also be rich in fats and proteins.
What is ideal depends on what you feel good after eating. I often feel bloated, tired and sluggish after eating some things because they just don't work well with my stomach. Experimentation is the best thing to do.

IF you mean like 1 hr before: My buddy swears by Booster Juice. Basically a fruit smoothie. All (fruit) sugar so it burns right as you ride and doesnt mess up your stomach by sitting there.

Before people make comments about the above I understand that with vigorous exercise, sugar and particularily fructose without fibre is beneficial to replenish CHO stores rapidly. Also, we have evolved to digest Lactose with Lactase over the last 5,000 years so milk isn't so bad for lots of people past infancy. Apart from that avoid sugar and processed foods to remain as fit and healthy as possible.
