Here I am.
Here I am sitting on Gerald's couch drinking an americano he's just made with his fancy espresso machine, his fancy $120 coffee grinder. I asked him to give me his coffee setup in his will. He hasn't said yes yet. But he's getting old so he should decide who gets it already. There's the bear in the back yard again! I named him Carl. He visits almost every day. I love Whistler.

It's good to have friends with good coffee. And it's not like I don't have anything to offer. I made muffins, they're really good and you can trade them for just about anything. I'll put the recipe at the bottom.

It's a beauty day, the day after summer solstice. It's a time for Mojito's.

Last night we went to Pemby and had a little bonfire, BBQed salmon and had fresh salad courtesy of Middle Coon's garden. We drank wine late into the night and ate fruit and chocolate with the dark and the fire. Mount Currie looks amazing in the night.
I always forget how many stars there are once you get away from lights to really see them.
Then we slept in tents and there was lots of dew in the morning. I said "it's going to be hot today".
And it is hot. And I have a new bike.
It's beautiful, a white Scott Voltage with a Fox 40 (my first time trying Fox) and all blinged out with blue Raceface stuff. I wish I had a photo to show you.

So! I'm going to go biking. It's a Wednesday, so that means there is a Phat Wednesday race. I think it's an A-line to Crabapple turns. But you know, I'm not really in the mood. I kind of want to happily ride my bike and listen to the Black keys. Then go to the pump track after... Then jump in a lake.
Some days you just don't feel that social, or that competitive. Here I am teaching Yarrow the pump track for the first time.

One of my goals this summer is to get a BBQ for the pump track. Do you know anyone with a BBQ for free?
I wonder how all the rope swings are.

Here is my muffin recipe. They're good cause they use 1/2 as much sugar as most recipes and they are pretty healthy- sort of Smile
You'll love it.


The Beth Muffins ever.

20ish mins in oven at 350
3 old gross brown bananas ( or maybe 4 if they're littler)
1 egg
1/2 cup sugar
1/3 cup olive oil or melted butter.
1 1/2 cup flour
pinch of salt
1 teaspoon baking soda
1 teaspoon baking powder

optional:
chopped walnuts
1 mango (or other fruit like raspberries)
or
A handful of dark chocolate chips
1/4 cup Cocoa powder

I just throw in a little handful of choc chips if I'm giving the muffins to boys (like your favorite bike mechanic) a few handfuls of chopped walnuts and maybe a chopped up mango. I've even done a tiny spoonful of strawberry jam in the middle of each muffin before. YUM! I like to press some oats or almond shavings on the tops like they do at the Fairmont hotel bakery.


Here's how:
1.Mix wet mix separate 2. Mix dry mix separate 3. Combine 4. Add everything else 5. Bake.

Details if you're new to this:

1. Mash up those bananas. I use a potato masher. Then mix in the oil and the egg. Mix it all up like a maniac.

2. (Now, you can do this next part in a separate bowl- or just on top of the wet mixture.)
Combine flour, b. powder, b. soda and salt.

3. Then add it to the wet mix. Use a wooden spoon or something. Don't mix forever, just a minute or so until it's all kinda even and it looks like batter. If you over mix, you'll get a muffin puck.

4. Now you can leave it just like that if you want, or you can add all the fun things to make them even yummier.

5. Then plop them into your muffin tins and bake for about 20 mins.

Note-
You can actually make this recipe without oil, or salt and it's still not bad. I know cause I've forgotten to put those ingredients in a few times. Not as good, but worth not throwing out bananas over.
