Don't get me wrong, I really enjoy riding but riding through waist high grass isn't a pleasureable experience generally. Love the photo though

I'm guessing you didn't know that fields aren't usually aren't farmed when they're that steep, so it's probably just a natural hillside. And the trail running up the aforementioned hill is probably quite a good one

All these things are possible. I guess you didnt know in yorkshire we dont let hillsides stop farming. Just my experience is all.
