Super nice! I've been thinking of doing exactly this. What did you use to strip the paint? Any regrets or anything you would do different next time?

No regrets till now.. It´s like having a new bike, very easy to do this in home.. I only paid for a professional painter to apply a protection cote to the frame.. I use 1 liter of V33 paint strip, but i think that any paint strip will work fine..

Will you clear coat ? Aluminum oxidises and gets a dull look . Another option is keep it raw and freshen up the look with steel wool.
Raw looks awesome.

Yup, 2 layer of automotive matte clear coat
