how do you make these photos? can you do it with a mac?

If you have Photoshop it does not matter on which platform you do it... It's all the same 
With a help of layers, you just stack the photos one by one and leave the background of one image and on the rest of the photos erase everything except for the rider!
easy peasy japaneasy
oh yeah use a tripod!
