they just run a X01 DH 7spd cassette with the chain on the last cog and a derailleur to tension the chain, its nothing that's never been done, I ran it for a while on my ticket S
They probably figure out what gear they like to be in after one run, adjust the set screw and you're done. And Ill bet they barely even have to adjust for course- they all seem to be in the smallest cog or close. They don't run the shifter because they rarely actually use it.
many of the bikes with a rear derailleur only uses it for compensating for chain growth due to suspension layout. Almost all of the hardtail or bikes where the main pivot point is concentric with the bottombracket just run single-speed. Only Drew and Cam has a working rear derailleur!
