A friend and I have done this to all our bikes. After tiny blackberry thorns kept piercing my tubes, I needed to do something different. This is a great system, and the naysayers have probably never tried it. Just be ready to put in a few pounds of air once a week or so. There are some outstanding recipes for making your own latex sealant online, too!

using a non tubless ready rim and non tubless ready tire, can I still go tubless. The tires bead is pretty solid, as it is a maxxis minion dhf dh bead that is dual ply with wire bead. Would this work?

There are times where the only thing to do is try it. Worse case, it doesn't hook up, you have a good rim strip.
