Yes, here in this area of Japan we have lots of wild deer and boar. So one of my students is a hunter and he gives me some nice cuts sometimes. I had a little block of deer and a big slab of boar. I had them in pepper, salt, garlic, vinegar and some herbs for about 4 days. I did this to rid the meat of the game taste it can have at times. Then we had a big BBQ on Saturday and I slowly smoked them in cherry wood and hickory for about 4 hours. Yummmm it was very tender and the flavor was intense but still had a nice meat flavor to it!
So, how did your jerkey come out? I can't buy jerkey here in Japan so, I need to one day try and make my own!
That's so awesome! Always so nice having some good connections I've been wanting to get into hunting, have the rifle and the attitude for it, just need a mentor I guess, or hire a guide. I want to get at least one deer and then some boar. Lots of places around here to do it I'm sure. The jerky came out great! I really like it. It's super easy to do. I just have a little food dehydrator. All I did was rub the meat (Beef bottom round roast) with a good amount of salt, some pepper, garlic powder, and some thyme. Had it in the dehydrator for about 3 hours. Dehydrators can be had for pretty cheap and work great. One day I will have a legit smoke house

As for hunting, I just go bike in the hills I don't have any guns nor have even thought about hunting.
But, if you come to Japan, I have many hunter friends, ahahhahhah
They could teach you a lot!

She has not. She's about as white as me haha. That would be such an amazing trip dude! Would be a great first time in Japan. I'm gonna start saving for that. I'll have to bring some of mine with me haha.

Yea I have the last two pieces with me for lunch today doesn't take me much time, the dehydrator gets it done in about 3 hours, and the seasoning and cutting part is easy. I will be getting on another batch very soon.
Trust me, I am. I already ordered a knife, going to order that book after work today, and I may or may not already have a London broil in the fridge...
