What do you think, is it worth it to switch from a 100mm SID to a 120mm fox 32 on a giant anthem 29er? Rear travel is 100 and the head angle on the 100mm sid is 71.5. If I switch to the 120 it would be closer to a 70 degree head angle

It'll definitely change how the bike feels. You will probably feel more confident on the descents and like the steering is more stable. On a Niner Jet RDO I owned, I moved from a 100 mm fork, to 120mm, then eventually down to 90mm and the 120mm fork definitely provided the most fun and confidence inspiring ride out of the three setups.
