Winter tyres and wide rims...

OK, so the wet weather has made my Maxxis minion semi-slick extremely 'exciting' recently so I'm in the market for a new rear tyre.

I ride a 160mm/150mm (f/r) bike on UK trail centres (hard or loose over hard surfaces) and natural terrain (grassy and muddy) - I hate changing tyres and I'm looking for a decent compromise between the two. I have wide rims (30mm ID). I'd class myself as a reasonable skill level and will ride most stuff, including some DH tracks (but at a slower speed and without any massive gaps/drops).

Given that the usual winter tyre suggestion is go to with a narrow tyre to cut through the mud, I'm just a bit concerned about the wide rim doing some odd things to the tyre profile. Is anyone out there using such a setup and is there anything I should consider before making a purchase?
(The alternative is to stay with a wide tyre but I'm a little worried it might float on the top of mud rather than cut in...)

Thanks for the advice in advance!
