Not all tires are the same, but I have a 2.8 Minion DHF on an Ibis 738 wheel on my hardtail. Profiled closer to a 2.6 but definitely wouldn't want it any wider and most certainly not any taller.
I’m running 2.8” NNs on my Ibis 738 rims and give a lovely round profile. There is very tight clearance to the RS Pike 27.5” boost fork brace but a bit more on each side.
I’m safe in the knowledge that Ibis would have thought about which pike to fit on their completes. I personally believe that they should have been + model pikes to give extra brace to tyre clearance. I’ll let you know when I use full travel and see if I get tyre buzz!
Haha!
You’ll need a 27.5” + fork to run 29” wheels iirc and 2.8” is really the max but does depend on volume, knob height etc too.

Hope that clarifies some points on your query
I'm also loving the profile of a 2.8 on these wheels. Sure is something to look at. Tire buzz at full travel! Either that or you're going for a ride, lol. But hey, I'm right there with you with my setup.
There must be like 5-10mm clearance tops to brace from knobs.
I.e. Not enough imo.
Do you ride an Ibis too ? :-)
Nah, I run an Ibis 738 wheelset on my hardtail and pretty stoked with them so far. Agreed with the clearance, mine is probably more like 7-8mm and run slightly higher pressure in the fork for now to avoid any accidental ejections.
