Have a 2019 Trek Xcaliber 8 that currently has stock 720mm bar with 5mm rise with 80mm stem and +/- 7 degrees. I wanted carbon bars. I ordered the RaceFace NEXT 35 carbon bar in 760mm with 10mm rise. Also bought two stems, a 60mm and 70mm FaceFace Aeffect ($32 ea.). Seems the research I did is all over the place as far as recommendations. What are some thoughts from the folks here at Pinkbike? Thanks!!!
Seeing as you have all the parts, just try both stems & see which one feels better. Having someone else tell you what works for them, may not be what works for you.

For XC I run a 35mm long Enve stem and 760mm wide Enve bar. It really works for me. I like the leverage and control the wide bar gives, and the quick steering and precise handling of the short stem.

I run a 750 bar and 60mm stem on a large frame bike. Works great for me.
Stock was 720 and 80mm stem.
Gained leverage and downhill confidence without losing much/any uphill climbing ability.
Bar is an answer pro taper carbon 750 and stem is an uno7. Lost 150ish grams too.

I am in the same ballpark size wise. 6' with 32 inseam. My Trek Xcaliber 8 is a 19.5. I didn't want to go full extreme with a shorter stem so went with the 60 and 70mm. I would think I end up settling on the 60mm. Will know tomorrow as its supposed to be delivered from CRC.

I used to run longer stems in the past but now I won't go longer than 50mm for most bikes. Really depends on the TT length and reach though.
It depends on the fit and overall geometry of the bike. 780mm bars and stems under 80mm make my scott scale really twitchy. I settled on 90mm and 740mm. You'll just have to experiment to find a good cockpit setup that balances descending and climbing. There is a reason XC racers run a long narrower cockpit though...

XC racers run a longer cockpit for better efficiency when climbing. Although you won't see many racers with stems longer than 110mm these days, as bikes are getting more and more aggressive every year. We even see dropper posts on a lot of top-level WC cross country bikes now.
You could look at that XC geometry needs a longer stem, which requires narrower bars, to keep the front end weighted on climbs when you are putting out big power. You are right though, most modern XC frames only need 80-100mm stems for riders that buy frames that fit. Some riders still ride tiny frames with long stems but IMO that's dumb.
Droppers are just usually more about recovery than they are for going faster in XC though.

Dropper moving the seat out of the way equals faster on the descents IMO.
I mounted the the bars with the 60mm stem and feels comfy so far. I need to get it out for a real ride though. Only rode it up and down the street for initial checking. I didn't even open the 70mm stem yet.
