Portugal Riding/Sintra Accomodation

Planning on spending a month in Portugal (mainland as I just did Madeira). Will be with my wife and son. Anyone have any good recommendations for places to ride outside of Sintra? Also any recommendations for bike friendly accomodation in Sintra or near enough. We will not have a car. Thanks in advance
