Sicily XC Recommendations

Looking for recommendations on where to ride in Sicily - specifically Palermo or Catania regions. I won't have a car and will need to rent a bike as well. I like flowy single track with tech and most the operators and shops I've contacted seem to offer rides on touring bikes with some of the ride on gravel. Looking for something a bit more so share your experiences.
