27.5's have become pretty trail/enduro focused and for someone like me, who is pretty much a CX rider, the wheelsets available are overbuilt and relatively heavier than their 29" counterparts.

Does anyone know of any lighter 30mm internal, 27.5" wheelsets?

RF Next R31 are the best I could find at 1680g,

Yeah I’ve noticed the same thing — seems like most of the 27.5 stuff these days is built assuming you’re smashing bike parks. I was actually looking around for something light myself a while back and ran into the same problem. Did you already check out DT Swiss or maybe Hunt? Curious what direction you’re leaning, because I’m in the same boat wanting something more XC/CX friendly without all the extra heft.
